Apple Filling:
4small applesor 2 medium – peeled and chopped

1tspcinnamon
¼tspnutmeg
50gbrown sugar≈ 4 tbsp
Crumble Topping:
50gall-purpose flour≈ ⅓ cup
35gwhite sugar≈ 3 tbsp
30gcold buttercubed (≈ 2 tbsp solid)
Dry Ingredients:
1½cupsall-purpose flour
½tspbaking soda
1tspbaking powder
Pinchof salt
½tspcinnamon
¼tspnutmeg
Wet Ingredients:
1large egg
½cupwhite sugar
40gmelted butter≈ 3 tbsp solid
¼cupvegetable oil
½cupmilk
Splash of vanilla extract
Instructions
Make the Apple Filling
In a saucepan, melt butter over medium heat. Add chopped apples, cinnamon, nutmeg, and brown sugar. Stir occasionally and cook for 8–10 minutes until apples are soft and syrupy. Set aside to cool.
Prepare the Crumble
Mix flour and sugar in a bowl. Add cold butter cubes and rub them in with your fingertips until the mixture resembles coarse crumbs. Chill until needed.
Mix the Batter
In a large bowl, combine all dry ingredients. In a separate bowl, whisk together egg, sugar, melted butter, oil, milk, and vanilla. Gradually sift the dry ingredients into the wet, folding gently until just combined.
Assemble the Muffins
Preheat oven to 200°C (390°F).
Line or grease a muffin tin.
Fill each cup with a scoop of batter.
Add 1 tsp of apple filling, then top with more batter.
Spoon a little extra apple filling on top.
Finish with a sprinkle of crumble — don’t overdo it, so the apples stay visible.
Ensure cups aren’t filled to the brim to prevent overflow while baking.
Bake
Bake at 180°C (350°F) for 25 minutes.
Then raise the temp to 200°C (390°F) and bake for 5–10 minutes more.
Do the toothpick test — it should come out clean or with soft crumbs.
