Bakery-Style Apple Cinnamon Muffins

Soft, moist, and filled with sweet apple and warm cinnamon — these bakery-style muffins are the ultimate cozy treat. Makes about 10 muffins to enjoy fresh or share.

Ingredients

Apple Filling:

  • 4 small apples or 2 medium – peeled and chopped
  • 2 tbsp butter
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 50 g brown sugar ≈ 4 tbsp

Crumble Topping:

  • 50 g all-purpose flour ≈ ⅓ cup
  • 35 g white sugar ≈ 3 tbsp
  • 30 g cold butter cubed (≈ 2 tbsp solid)

Dry Ingredients:

  • cups all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

Wet Ingredients:

  • 1 large egg
  • ½ cup white sugar
  • 40 g melted butter ≈ 3 tbsp solid
  • ¼ cup vegetable oil
  • ½ cup milk
  • Splash of vanilla extract

Instructions

Make the Apple Filling

  • In a saucepan, melt butter over medium heat. Add chopped apples, cinnamon, nutmeg, and brown sugar. Stir occasionally and cook for 8–10 minutes until apples are soft and syrupy. Set aside to cool.

Prepare the Crumble

  • Mix flour and sugar in a bowl. Add cold butter cubes and rub them in with your fingertips until the mixture resembles coarse crumbs. Chill until needed.

Mix the Batter

  • In a large bowl, combine all dry ingredients. In a separate bowl, whisk together egg, sugar, melted butter, oil, milk, and vanilla. Gradually sift the dry ingredients into the wet, folding gently until just combined.

Assemble the Muffins

  • Preheat oven to 200°C (390°F).
  • Line or grease a muffin tin.
  • Fill each cup with a scoop of batter.
  • Add 1 tsp of apple filling, then top with more batter.
  • Spoon a little extra apple filling on top.
  • Finish with a sprinkle of crumble — don’t overdo it, so the apples stay visible.
  • Ensure cups aren’t filled to the brim to prevent overflow while baking.

Bake

  • Bake at 180°C (350°F) for 25 minutes.
  • Then raise the temp to 200°C (390°F) and bake for 5–10 minutes more.
  • Do the toothpick test — it should come out clean or with soft crumbs.
  • Let cool slightly before enjoying!
