2tbspsugar
2tspbaking powder
200mlmilk
2eggs
1tbspvanilla essence
Instructions
In a large bowl, whisk the eggs and sugar together until slightly frothy.
Add the flour and baking powder, stirring gently until just combined.
Pour in the milk and vanilla essence, mixing until smooth. Avoid overmixing to keep the pancakes light and fluffy.
Heat a non-stick or lightly buttered pan over medium heat. Pour about 1/4 cup of batter for each pancake.
Cook until bubbles form on the surface and the edges look set, then flip and cook for another minute or so until golden brown.
