Pancakes

These soft vanilla pancakes are a quick way to treat yourself. The recipe flips up about 10 pancakes total, with around 3 pancakes per serving — unless you’re feeling extra hungry (no judgment here!). Each serving comes in at roughly 250–300 calories.

Ingredients
  

  • cup all purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 200 ml milk
  • 2 eggs
  • 1 tbsp vanilla essence

Instructions
 

  • In a large bowl, whisk the eggs and sugar together until slightly frothy.
  • Add the flour and baking powder, stirring gently until just combined.
  • Pour in the milk and vanilla essence, mixing until smooth. Avoid overmixing to keep the pancakes light and fluffy.
  • Heat a non-stick or lightly buttered pan over medium heat. Pour about 1/4 cup of batter for each pancake.
  • Cook until bubbles form on the surface and the edges look set, then flip and cook for another minute or so until golden brown.
  • tack ’em high, top with a slab of butter and your favorite syrup, and enjoy!
