So you’ve bought a handful of bananas and left them on the counter a little too long… Now they’re ripe, spotty, and you’re thinking, ‘What the heck do I do with these?’ In the West, people might make banana bread, but here in Mauritius, we take those overripe bananas and turn them into golden, crispy fritters — the perfect treat for an afternoon tea session with a hot cuppa. Simple, sweet, and irresistibly tasty, these fritters are the kind of comfort food that’ll have you reaching for one (or three) in no time!
Of course, there are plenty of ways to make these fritters, with some adding more flour or baking powder for extra fluff. But this recipe, passed down through the generations, focuses on keeping that rich, sweet banana flavor front and center.
